Delicious Chicken Fatteh

A very tasty homemade chicken fatteh recipe... The steps are very simple, and the result is even better, especially if you serve it like we do alongside bulgur with vermicelli and chickpeas.

Ingredients

Start here, then move straight into the method.

  • Fatteh
  • 1 kilo chicken thighs or drumsticks, as desired
  • Aromatic seasonings for boiling, such as bay leaves, cinnamon sticks, cloves, cardamom pods, black peppercorns, an onion, and a piece of lemon
  • 1/2 kilo yogurt
  • 1 large tablespoon tahini
  • 1 clove garlic
  • Fried nuts, as desired
  • 2 large tablespoons butter
  • A sprinkle of parsley, optional
  • Salt
  • Oil or ghee for cooking
  • 2 loaves bread, cut and toasted or fried
  • Fluffy bulgur with vermicelli and chickpeas
  • 1/2 kilo coarse white bulgur
  • 2 cups vermicelli
  • 1 cup boiled chickpeas
  • Oil

Method

Follow the cooking sequence without leaving the page.

  1. First, boil the chicken with the aromatics, and meanwhile start preparing the bulgur with vermicelli.
  2. Fry the vermicelli in a little oil until golden, then add the bulgur, the pre-boiled chickpeas, and water (each cup of bulgur needs 1 cup of water). Season with salt and stir.
  3. When the water comes to a boil, immediately lower the heat and cover the pot.
  4. Let the bulgur cook over low heat.
  5. To prepare the fatteh, crush the garlic and mix it with the yogurt, tahini, and salt, then whisk well.
  6. In a serving dish or fatteh platter, spread the toasted bread, then the yogurt mixture, then the chicken with the bones removed, and the fried nuts.
  7. Melt the butter and drizzle it over the top with a sprinkle of parsley. Serve the fatteh immediately alongside the bulgur with vermicelli.
