Method
Follow the cooking sequence without leaving the page.
- Blanch the kale in boiling water until the leaves soften.
- Drain it well and put it in a non-stick pan on the heat together with the clean spinach leaves.
- Stir the kale and spinach until they wilt.
- Drain them and squeeze them by hand after they have cooled slightly.
- Set them aside while preparing the onions: in a pan fry sliced or wedged onions in olive oil until they soften.
- Add the fried onions with a little salt to the squeezed greens and sauté them together briefly in the pan.
- Finally add a squeeze of lemon and toss.
- Pour the kale and spinach asoura into a serving dish.
- Separately, fry wedged onions in a little olive oil with a pinch of salt until crispy to garnish the asoura.
- Let the dish cool slightly before serving.
