Spinach Pies Dough and Mini Pizza
A reliable homemade dough recipe for pies! Use it for spinach pies, other savory pies, or even pizza. The recipe also includes a new spinach filling method.

Ingredients
Start here, then move straight into the method.
- 1 kilo flour
- 2 tablespoons sugar
- 2 tablespoons yeast
- 2 tablespoons vinegar
- A pinch of salt
- 1/2 cup oil
- 3 tablespoons dry powdered milk
- 2 tablespoons yogurt
- 2 cups lukewarm water, a little less or a little more as needed, depending on the flour
- Spinach filling
- 2 kilos spinach
- 3 large onions
- 1 tablespoon sweet red pepper paste
- 2 tablespoons sumac
- 1/2 small spoon seven-spice blend
- 1/2 small spoon cumin
- Salt
- Oil
- Olive oil for brushing the pies after baking
Method
Follow the cooking sequence without leaving the page.
- In a bowl, mix all the dry ingredients with the vinegar and oil and rub them together.
- Add the water gradually and knead until you get a soft dough.
- Cover it with plastic wrap and a cloth over it, and let it rest in a warm place for at least one hour.
- Start preparing the filling: pick over the spinach, wash it well, drain it, then chop it.
- Place the chopped spinach in a pot over the heat and stir until it releases its water and wilts, without cooking it.
- Drain off the water and squeeze it well.
- Finely chop the onion and sauté it in a little oil over the heat until it softens slightly.
- Add the spinach to the onion once it softens, then add the pepper paste and the rest of the filling ingredients. Stir briefly before turning off the heat.
- When the filling has cooled, add the sumac and mix.
- Roll out the dough and cut it into circles of the desired thickness, then seal them into triangles or shape as desired.
- Bake the spinach pies in the oven until cooked through, then brown them from the top.
- Remove them from the oven and brush them with a little olive oil.
