Ingredients
- ¾ kg whole-wheat flour with bran
- 1 tsp salt
- 1 tbsp sugar
- 3 tbsp sesame seeds
- 2 tbsp anise seeds
- ½ cup fine whole-wheat bulgur
- ¼ cup olive oil
- 1 tbsp yeast
- For kneading: 2 1/2 cups warm water, or as needed

Method
- Place the bulgur and olive oil in a bowl and rub them together well.
- Put the remaining ingredients (except the yeast) in another bowl.
- Add the bulgur mixture on top of the flour mixture along with 1 tbsp yeast.
- Add warm water as needed and knead.
- Let the dough rise well.
- Shape the dough into balls, roll them out, and add cheese, za'atar, or other fillings as desired. You can also leave them plain and serve after baking with labneh, za'atar, and olives.
- Bake in a hot preheated oven until the dough is cooked through.
