Easy Spinach Frittata

Ingredients

  • A bunch of green spinach, washed and chopped
  • 2 green onions, cut into small pieces
  • 8 eggs
  • 3 tablespoons flour
  • 1 teaspoon baking powder
  • 3 tablespoons olive oil
  • Crushed peanuts (optional)
  • Peanuts for garnish
  • Black pepper
  • Salt
  • Tahini sauce
  • Half a cup tahini
  • Half a cup water
  • 6 tablespoons lemon juice
  • 1 clove garlic, crushed
  • Salt to taste

Method

Follow the cooking sequence without leaving the page.

  1. In a bowl, beat the eggs well, then add the flour and continue beating.
  2. Add the spinach to the egg mixture and stir, then add the baking powder and crushed peanuts and mix well until combined.
  3. Place the spinach frittata mixture in a 30 cm diameter baking pan and put it in a preheated oven at 180°C for about 10 minutes.
    Timers: 10 min
  4. When the spinach frittata is cooked, drizzle olive oil on top and lightly brown the surface.
  5. You can add mushrooms or any other vegetables, cut into small pieces.
  6. Serve the spinach frittata alongside the tahini sauce.
  7. Add the salt and crushed garlic and mix all the ingredients one last time.
  8. You can add more tahini or lemon juice according to taste.
  9. Mix the tahini with the water well, taking care to avoid lumps.
  10. Add the lemon juice and mix the ingredients again.
