Vegetable Egg Omelet
A vegetable omelet that's easy to make but rich and satisfying. Try it for a light dinner, and feel free to add whatever vegetables you have on hand or prefer.

Ingredients
Start here, then move straight into the method.
- 2 cups grated broccoli - can be substituted with cauliflower
- 3 medium zucchini, grated and well squeezed of water
- 3 large carrots, grated
- An onion
- 1 cup boiled corn
- 5 eggs
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 cup breadcrumbs
- 1/2 cup white flour or oat flour
- 1/2 cup Parmesan cheese
- 1/2 teaspoon baking powder
- Oil for greasing the pan

Method
Follow the cooking sequence without leaving the page.
- Place all the vegetables in a bowl and mix well
- In another bowl, combine the flour, breadcrumbs, cheese, baking powder, turmeric, paprika, and pepper well
- Add the flour mixture to the vegetables and mix until well combined
- In another bowl, whisk the eggs well and add them to the mixture, then mix by hand
- In a skillet over medium heat, add a little oil. Once hot, spoon in some of the mixture and cover for 5 to 7 minutes, then carefully flip without covering itTimers: 7 min
- Serve the vegetable omelet with tahini sauce and green salad
