Black olive curing is very easy. Of course, the method is different from the one used for curing green olives. You’ll find all the steps in this recipe.
Ingredients
- Black olives
- 1 kilogram coarse salt for every 10 kilograms of olives
- Olive oil
- Lemon slices - optional
- Hot pepper pods - optional
Method
- Wash the olives, then using a sharp knife make a light slit in each olive from both sides, just through the surface
- Put water in a pot and place it over the heat until the water boils
- When the water boils, add the olives for just 2 minutesTimers: 2 min
- Remove them from the water and rinse immediately with cold water
- Add the coarse salt over the olives, mix, and place them in a colander for 2 days
- After 2 days, spread the olives in large flat containers so they do not pile up too much, and leave them this way for about a week
- When the olive skins wrinkle, place them in clean jars
- Add lemon slices and hot peppers to the olives, then cover everything in the jars with olive oil and close the jars tightly
- Do not open the jars before at least 10 days have passed
