Ingredients

- Dough
- 1 kilogram all-purpose flour
- 1 tablespoon instant yeast
- 2 tablespoons sugar
- 2 tablespoons vinegar
- 1 teaspoon salt
- 1 cup yogurt
- 1 cup warm milk for kneading and activating the yeast
- Cheese manakish filling
- Kashkawan cheese, or as desired
- Vegetable oil
- Sesame seeds
- Nigella seeds
- Method
- Za'atar manakish filling
- Za'atar (the Lebanese blend made from dried ground thyme mixed with sumac and sesame)
- Olive oil
- Tomato and onion manakish filling
- 2 dried onions
- 3 tomatoes
- 1 green sweet pepper
- 1 hot pepper, optional
- Salt
- Dried mint
- Finely chop the vegetables very well, add the salt, mint, and oil, and mix.
- Before using, strain the filling from any excess liquid so the dough does not become soggy when you spread some of the filling over it and bake it.
Method
Follow the cooking sequence without leaving the page.
- In a mixing bowl, add the dry dough ingredients and mix them.
- Make a well in the center, add the sugar, yeast and warm milk, mix, and leave until the yeast activates.
- Add the vinegar, yogurt and oil, and knead until a cohesive, soft dough forms.
- Cover and let it rise for about an hour until it has risen well and doubled in size.
- Prepare the fillings beforehand so they are ready when the dough has finished rising.
- When the dough has risen, shape it into medium-sized balls.
- Roll the balls out with a rolling pin on a lightly floured surface.
- Place the breads after filling them as desired on trays lightly brushed with oil (or lined with parchment) and bake in a hot oven.
