This banana cake with raisins is a quick, easy recipe that kids can take to school as a light homemade treat.

Ingredients

  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup golden or brown raisins, according to availability and preference
  • ½ cup sugar
  • ½ cup vegetable oil
  • 3 ripe bananas
  • ¼ cup plain yogurt
  • A pinch of salt
  • 3 cups flour
  • A small pinch of baking soda
  • ½ teaspoon baking powder

Method

  1. Before starting the cake, preheat the oven long enough and wash the raisins, leaving them soaked in water.
  2. Beat the eggs and vanilla for several minutes, then gradually add the sugar and oil while continuing to beat.
  3. Mash the ripe bananas and mix them with the yogurt, then add them to the egg mixture.
  4. Gradually add the flour, bicarbonate of soda, and baking powder to the mixture, and stir with a wooden spoon.
  5. Add the plump raisins after draining and drying them, and fold in gently.
  6. Pour the banana cake batter into a baking pan or cake tin lightly greased with a little tahini.
  7. Bake the banana cake in the preheated oven at 180°C for about 45 minutes, or until the cake is fully cooked and has risen, depending on the oven.
