Zucchini quiche is one of the most famous French recipes and a new way to serve zucchini, away from the usual traditional zucchini dishes.

Ingredients

  • Ready-made or homemade quiche pastry*
  • 1 large firm zucchini
  • 2 tablespoons caramelized onion
  • 150 ml cooking cream
  • 3 eggs
  • 4 spring onions
  • Salt
  • Black pepper
  • 100 g mozzarella or blue cheese, as desired
  • A pinch of wild thyme (oregano)
  • Quiche pastry ingredients:
  • 200 g flour
  • 85 g butter
  • 80 g grated Parmesan cheese
  • 2 egg yolks
  • 2 tablespoons water
  • Remove the zucchini quiche from the oven and set it aside to cool before serving; garnish as desired.

Method

  1. First, prepare the quiche pastry by placing the flour, butter cut into cubes, and grated Parmesan in a food processor.
  2. You will find that the dough has turned into crumbs... add the egg yolks and 2 tablespoons of water.
  3. You should get a soft dough. Place it on a clean surface dusted with flour and knead until smooth and well combined.
  4. Roll the dough between two sheets of parchment paper until you get a circle large enough for a quiche pan and with the right thickness.
  5. Cover the rolled dough, still between the two sheets of parchment, and place it in the refrigerator for 1 hour.

  6. Meanwhile, slice the zucchini into thin rounds and chop the spring onions.
  7. Place the zucchini and onions in a colander, sprinkle with salt, and leave for 1 hour so the water drains out.

  8. After the required time, roll out the quiche dough in a baking pan and lift the edges to form the quiche shell. Prick the dough with a fork so it does not puff up during baking.
  9. Bake the quiche crust in a preheated oven for 20 minutes.

  10. Dry the zucchini and onions well with paper towels or kitchen towels to remove any remaining moisture. Place them in a bowl and mix with the mozzarella or blue cheese, as desired.
  11. Add the caramelized onion and thyme over the zucchini, then spread the mixture over the baked quiche crust. You can arrange the zucchini slices neatly as you add them, depending on the shape of the pan, for a beautiful presentation.
  12. In a separate bowl, whisk the eggs with the cooking cream, salt, and black pepper.
  13. Pour the egg and cream mixture over the zucchini mixture.
  14. Bake the zucchini quiche in a preheated oven for 35 minutes, or until the ingredients are well cooked.

  15. Remove the zucchini quiche from the oven and let it cool slightly before serving. Garnish as desired.
