- 1 and 2/3 cups flour
- 1/2 cup room-temperature butter
- 1/2 cup powdered sugar
- 1 egg
- 3 tablespoons sour cream or 3 tablespoons yogurt with 1/4 teaspoon vinegar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 and 1/2 teaspoons baking powder
- 2 teaspoons lemon zest
- Filling:
- 1/4 cup ground walnuts
- 1/4 cup peach jam
- Cookie crumbs
- 1/4 teaspoon vanilla
- For decoration:
- Sugar
- Yellow and red food coloring
- Apple juice or to taste
- Small mint leaves
Method
- Beat the butter with the sugar until creamy; add the egg while continuing to beat, then add the sour cream, lemon zest, and vanilla and mix.
- In another bowl, sift the flour with the salt and baking powder, then add them to the butter mixture and beat until smooth and uniform.
- Roll the dough into small balls; line a baking tray with parchment paper and arrange the balls on it. Press each ball slightly with the palm of your hand to form a semi-flat, half-moon shape.
- Place the tray into a preheated oven at 180°C for about 12 minutes. When the cookies have cooled to room temperature, make a small hole in the back of each half-moon with a sharp small knife.Timers: 12 min
- In another bowl, mix the cookie crumbs with the walnuts, jam, and vanilla, then transfer the mixture to a piping bag and use it to fill the cookies.
- Meanwhile, prepare the decoration: put a little apple juice with a drop of red food coloring in one bowl and a little apple juice with yellow food coloring in another. Dip one side of each cookie into the red, then the other side into the yellow, and immediately dip the juice-coated cookie into sugar.
- Garnish the Peach Dessert Cookies with fresh mint leaves and serve.
