Pakistani vermicelli kunafa — a distinctive and very delicious dessert!

Ingredients

  • 1 cup plain yogurt
  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 cup desiccated coconut
  • 3 eggs
  • 1 can sweetened condensed milk
  • 3 tbsp powdered milk
  • 3 pieces cream cheese
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 packet ready-made Pakistani vermicelli
  • Shelled pistachios for garnish

Method

  1. Place the yogurt, oil, eggs, vanilla, cream cheese and sugar in a blender.
  2. Blend the ingredients for three minutes.
  3. Pour the mixture into a bowl and add the remaining ingredients.
  4. Add the flour, desiccated coconut and baking powder and stir in one direction until you have a smooth batter.
  5. Pour the batter into a greased baking pan and sprinkle the vermicelli over the top.
  6. Bake the Pakistani vermicelli kunafa in a preheated oven at 180°C (356°F) for 40 minutes.
    Timers: 40 min
  7. When baked and still hot, pour the sweetened condensed milk over the kunafa so it soaks in.
  8. Cut to size as desired and serve immediately.
