Crepes — easy and kids will love them.

Ingredients

  • 1 egg
  • 1 tablespoon softened or melted butter
  • A dash of vanilla
  • 1 tablespoon sugar
  • A pinch of salt
  • 1 cup flour
  • 2 cups liquid milk (or slightly less, as needed)
  • Chocolate for filling the crepes

Method

  1. Whisk the egg with the butter, vanilla, sugar, and salt until the sugar dissolves
  2. Add the milk and flour and stir well with a whisk or spoon... the important thing is to avoid lumps of flour. The batter should be slightly runny
  3. In a hot pan, add a drizzle of oil and pour about one tablespoon of the crepe batter
  4. Quickly, hold the pan by the handle and tilt and rotate it to spread the batter across the pan so you get a very thin disk
  5. When it cooks on the first side, flip the disk to the other side to color slightly without overdoing it; the disk needs about a minute or less on each side
  6. Repeat the process until all the batter is used and stack the crepes on top of each other
  7. Let the crepes cool, then fill them with chocolate, roll them up, and serve
