Samosa dough... a successful recipe that works with all the fillings you can think of
Ingredients
- 2 cups flour
- a pinch of salt
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- 1 tablespoon ghee or butter
- 3/4 cup lukewarm water, or as needed
- Meat filling:
- ground meat
- finely chopped onion
- a little oil
- 1 medium tablespoon ghee
- a pinch white pepper
- a pinch seven-spice blend
- a pinch cinnamon
- salt to taste
- Cheese filling:
- mozzarella cheese
- grated kashkaval cheese
- feta cheese
- a sprinkle of nigella seeds (black cumin)
- a sprinkle of chopped parsley — optional
- Cover the dough with plastic wrap and a cloth and let it rest for 30 minutes
- Meat filling:
- Sauté the ground meat in oil and ghee until the color changes
- Sprinkle salt and spices, stir, then remove the filling from the heat

Method
- Rub all the ingredients together except the water until they resemble sand
- Add the water and knead for at least 15 minutesTimers: 15 min
- Cover the dough with plastic wrap, then a cloth, and let it rest for 30 minutesTimers: 30 min
- After the time is up, divide the dough into large pieces and let them rest for 10 minutesTimers: 10 min
- Roll out the dough into thin sheets and cut into small or medium round pieces
- Fill them as desired, seal with your fingers, and fry in plenty of hot oil until golden. They can also be frozen until needed
- Add the finely chopped onion and stir with the meat until the filling is cooked through
- Season with salt and spices, stir, then remove the filling from the heat
- Let it cool before filling the samosa dough
- Mix the ingredients together and fill the dough immediately
