Easy pumpkin (or squash) soup — a homemade recipe both kids and adults will love, perfect for chilly days!

Ingredients

  • Half a pumpkin or squash (adjust quantity as needed)
  • 2 small dry onions, finely chopped
  • 2 cups water or 2 cups vegetable or meat stock (as available)
  • 1/2 teaspoon ground nutmeg
  • 1 cup liquid milk
  • 1 large potato
  • Salt, to taste
  • 1/4 teaspoon black pepper

Method

  1. Heat a little vegetable oil in a deep pot suitable for soup and sauté the onion until soft.
  2. Add the chopped pumpkin and potato to the onion and stir well to combine.
  3. Add the stock or water and salt, cover the pot, and simmer until the pumpkin is fully cooked and very tender.
  4. Blend the mixture with an electric blender until smooth, then return the soup to the pot.
  5. Stir in the cup of milk and simmer the soup with the milk for about 10 minutes.
    Timers: 10 min
  6. Add a pinch of nutmeg and the black pepper, then remove from the heat.
  7. Ladle the soup into serving bowls and garnish the pumpkin soup with a little chopped fresh parsley.
