Easy pumpkin (or squash) soup — a homemade recipe both kids and adults will love, perfect for chilly days!
Ingredients
- Half a pumpkin or squash (adjust quantity as needed)
- 2 small dry onions, finely chopped
- 2 cups water or 2 cups vegetable or meat stock (as available)
- 1/2 teaspoon ground nutmeg
- 1 cup liquid milk
- 1 large potato
- Salt, to taste
- 1/4 teaspoon black pepper
Method
- Heat a little vegetable oil in a deep pot suitable for soup and sauté the onion until soft.
- Add the chopped pumpkin and potato to the onion and stir well to combine.
- Add the stock or water and salt, cover the pot, and simmer until the pumpkin is fully cooked and very tender.
- Blend the mixture with an electric blender until smooth, then return the soup to the pot.
- Stir in the cup of milk and simmer the soup with the milk for about 10 minutes.Timers: 10 min
- Add a pinch of nutmeg and the black pepper, then remove from the heat.
- Ladle the soup into serving bowls and garnish the pumpkin soup with a little chopped fresh parsley.
