Lentil Soup with Tomatoes
A very easy, flavorful lentil soup with tomatoes and vegetables. Soups of all kinds are very healthy and especially good in cold weather or when you have a cold.
Ingredients
Start here, then move straight into the method.
- 1 cup red lentils
- 8 cups water or more as needed
- 2 medium carrots, chopped
- 2 medium potatoes, cut into quarters
- 2 tomatoes, cut into quarters
- 1 onion, cut into four pieces
- 1 tablespoon chopped parsley
- 1 medium onion, chopped
- 1/3 cup vegetable oil
- 2 chicken bouillon cubes
- 1 teaspoon cumin
- 1 teaspoon salt
Method
Follow the cooking sequence without leaving the page.
- Wash all the vegetables and set them aside.
- Wash the lentils and put them in a pot with all the chopped vegetables. Add the chopped parsley and cook the ingredients until the lentils and vegetables are tender.
- Turn off the heat and let the mixture cool slightly.
- Puree the mixture in a food processor until smooth. Return the pureed soup to the pot over heat and add the chicken bouillon cubes, cumin, and salt.
- Heat the oil and fry the chopped onion until golden, then pour it over the soup. Simmer all the ingredients over the heat for 4 to 5 minutes ...Timers: 5 min
