Ingredients:

1 cup red lentils

\r\n

8 cups water or more as needed

\r\n

2 medium carrots, finely chopped

\r\n

2 medium potatoes, quartered

\r\n

2 tomatoes, quartered

\r\n

1 onion, quartered

\r\n

1 tablespoon chopped parsley

\r\n

1 medium onion, chopped

\r\n

1/3 cup vegetable oil

\r\n

2 bouillon cubes

\r\n

1 teaspoon cumin

\r\n

1 teaspoon salt

\r\n \r\n \r\n

Preparation:

\r\n

Rinse all vegetables and set aside.

\r\n

Rinse the lentils and place in a pot with all the chopped vegetables. Add the chopped parsley and cook until the lentils are tender with the vegetables.

\r\n

Turn off the heat and let the mixture cool slightly.

\r\n

Mash the mixture in a food processor to obtain a puree. Return the soup to the pot and add the bouillon cubes, cumin, and salt.

\r\n

Heat the oil and fry the chopped onion until golden, then pour over the soup. Bring everything back to a simmer for 4–5 minutes.

\r\n

Serve the lentil soup with tomatoes and vegetables and bread cubes.

\r\n
