Ingredients

  • 1 cup red lentils
  • 8 cups water or more as needed
  • 2 medium carrots, chopped
  • 2 medium potatoes, cut into quarters
  • 2 tomatoes, cut into quarters
  • 1 onion, cut into four pieces
  • 1 tablespoon chopped parsley
  • 1 medium onion, chopped
  • 1/3 cup vegetable oil
  • 2 chicken bouillon cubes
  • 1 teaspoon cumin
  • 1 teaspoon salt

Method

  1. Wash all the vegetables and set them aside.
  2. Wash the lentils and put them in a pot with all the chopped vegetables. Add the chopped parsley and cook the ingredients until the lentils and vegetables are tender.
  3. Turn off the heat and let the mixture cool slightly.
  4. Puree the mixture in a food processor until smooth. Return the pureed soup to the pot over heat and add the chicken bouillon cubes, cumin, and salt.
  5. Heat the oil and fry the chopped onion until golden, then pour it over the soup. Simmer all the ingredients over the heat for 4 to 5 minutes ...
