Ingredients
- 800 غرام فيليه سمك
- ملح
- زيت
- رشة بهار ابيض
- رشة كمون
- بصلة كبيرة جوانح
- زيت البصل المقلي
- خبز محمص للوجه
- عصير حامض للتقديم
- لوز محمص للزينة
- صلصة الطحينة
- 3 حصوص ثوم
- كوب طحينة
- عصير 2 حبة برتقال
- عصير 2 حبة كلمنتين
- ربع كوب عصير بوصفير
- 2 ملعقة كبيرة حامض
Method
- Season the fish fillets with a pinch of salt and a little oil, then bake in the oven until cooked through
- Prepare the tahini sauce by whisking the tahini with the citrus juices listed in the ingredients and a pinch of salt. You can add more bitter orange juice and clementine juice as needed to get a pourable sauce, since it will thicken on the stove
- Toast the almonds in some oil, then set aside and use the same oil to fry the onion wedges until softened
- Remove the fish from the oven and place it directly into the pan with the onions so it picks up the onion oil and gets a beautiful color
- Add the tahini sauce to coat the fish, then add a pinch of white pepper and cumin and let the sauce simmer gently long enough to thicken
- When the fish tagine is ready, garnish with pieces of fried bread and toasted almonds, and serve with a squeeze of lemon juice
