- First, prepare the syrup and take 3 cups of it, then set the rest aside.
- Dissolve the cornstarch in 1/2 cup cold water, then add it to the syrup in the pot.
- Whisk well and place over the heat until it boils, stirring, then reduce the heat.
- Continue stirring while it simmers over low heat for 10 minutes without stopping.Timers: 10 min
- Crush the mastic in advance with 1 tablespoon of sugar, then add it to the syrup-and-cornstarch mixture. Add the orange blossom water too and continue stirring for 5 more minutes.
- Scoop out a little of the mixture, about a spoonful, and set it aside in a bowl to check whether it needs more cooking. It should have a stretchy texture.
- When the texture becomes stretchy, add the butter, which keeps the Turkish delight soft, and stir until melted, then remove from the heat.
- Grease the tray or container you want to pour the Turkish delight into with a little oil. Pour in the mixture, then sprinkle a little cornstarch and powdered sugar on top and cover the container with plastic wrap.
- Let it sit for about 4 hours at room temperature, then turn it out, sprinkle with cornstarch and powdered sugar again, and cut the large piece of Turkish delight into small or medium cubes as desired.Timers: 240 min
- Store in an airtight container.
