How to make Rahat al-Halqum (Turkish delight) — a clear, easy homemade recipe
Ingredients
- 1 cup water
- a small pinch of salt
- 1/2 cup cornstarch
- powdered (icing) sugar, for dusting
- Syrup:
- 1 1/2 cups sugar
- 1/2 cup water
- a squeeze of lemon juice
- 1 tablespoon rose water
Method
- Start by preparing the syrup: put the sugar, water, and lemon juice in a pot over the heat and let them boil for 10 minutes before adding the rose water and turning off the heat.Timers: 10 min
- In another pot, mix the water, a pinch of salt, and the starch and continue stirring until the mixture thickens.
- Gradually add the syrup over the starch mixture and continue stirring over low heat for 20 minutes.Timers: 20 min
- In a suitable dish, place parchment paper and brush it with a little oil, then pour the delight mixture and leave it to cool for two hours.
- After the time has passed, sprinkle starch where you will cut and on the delight, and cut the Turkish delight into squares.
- After that, coat the pieces with powdered sugar on all sides and serve.
- Note: For more flavors, you can replace the rose water with vanilla or mastic, or replace half a cup of the water for the syrup with pomegranate juice.
- Nuts and food coloring can also be added to obtain different colors of the delight.
