Homemade Petit Fours (Butter Cookies)

Ingredients

- 907 g flour (about 4 large cups)
- 450 g butter, at room temperature
- 2 cups powdered (confectioners’) sugar
- 4 eggs
- 1 teaspoon vanilla
- 1/2 tablespoon lemon juice (optional)
- 1 tablespoon baking powder

Method
Follow the cooking sequence without leaving the page.
- Beat the butter slightly, then gradually add the sugar until all is incorporated
- Add the eggs and vanilla and continue beating
- Gradually add the flour and baking powder and knead until we get a soft, tender dough that does not crack
- Shape the petit fours using the specialized molds
- Arrange the petit fours on parchment paper on the tray then put them in the oven on the second rack for 5 minutes at 200°CTimers: 5 min
- Brown them for two minutes on top after they are baked
- Remove the petit fours from the oven and let them cool at room temperature
- Fill them with jam or chocolate and sandwich each pair of petit fours together... or decorate them with chocolate
