Ingredients

  • 1 cup flour
  • 1 cup grated carrots
  • 1/2 cup oil
  • 1/2 teaspoon baking powder
  • zest of 1 lemon
  • 1 cup sugar
  • 1/4 cup milk

Method

  1. Mix the sugar, grated carrot, oil, and lemon zest until the sugar dissolves. Add the flour and baking powder, then the milk, and knead until you have a firm dough.
  2. Roll the dough out on a clean surface and cut into your preferred shapes. Place the pieces on parchment paper on a baking tray and bake in a preheated oven at 180°C (350°F) for 15 minutes.

  3. When the carrot cookies have cooled, dust them with powdered sugar and serve.
