Okra with meat — one of the tastiest stews, served with vermicelli rice
Ingredients
- Meat, cut into pieces suitable for stewing
- Okra
- Aromatics for boiling the meat (onion, bay leaf, a cinnamon stick, a few cardamom pods and cloves), to taste
- Crushed garlic
- Vegetable oil
- Fresh cilantro (coriander), finely chopped
- Salt, to taste
- A pinch of ground cinnamon
- A pinch of seven-spice mix
- Tomato paste
- Pomegranate molasses

Method
- Boil the meat with aromatics until tender
- In a second pot... sauté the crushed garlic with a little oil until softened, then add coriander and sauté until it wilts as well
- Add the boiled meat pieces with a pinch of salt, cinnamon, and seven-spice mix and stir.
- Add the meat boiling broth with tomato paste as desired and stir.
- Bring the pot to a slight boil
- Meanwhile, sauté the okra in a very small amount of vegetable oil in a skillet for a short time
- Add the okra to the pot with the meat and broth and let it simmer over low heat until it is completely cooked and the sauce thickens... without excessive boiling to keep the okra pods intact and prevent them from splitting due to over-boiling
- Finally, add a drizzle of pomegranate molasses on top and a sprinkle of fresh cilantro, adjust the salt, give it one stir, and remove the pot from the heat
- Serve the okra with meat with vermicelli rice
