Ingredients

  • 1 bunch fresh green hendbeh (dandelion greens)
  • 1 onion (dry)
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 sweet or hot pepper - as desired
  • Salt
  • A pinch of black pepper
  • 1 tablespoon vegetable oil

Method

  1. Wash the dandelion greens, chop them, then soak them in water with salt and vinegar for several minutes to remove any dirt and make sure they are thoroughly clean.
  2. Place a deep pot over the heat and add water, salt, and 1 tablespoon of baking soda.
  3. Once the water comes to a boil, add the dandelion greens and let them cook until tender.
  4. Transfer the boiled dandelion greens to a colander to drain off the water, and let them cool.
  5. Put the oil in a wide skillet and fry the onion until softened, then add the minced garlic, not mashed garlic, and stir the onion and garlic until softened.
  6. Add the pepper, then add the dandelion greens after squeezing out the water.
  7. Stir the dandelion greens with the onion, garlic, and pepper, then add salt, black pepper, and crushed hot pepper to taste. Let the mixture cook for 5 minutes, then add the lemon juice and turn off the heat.
