How to Make Turkish Ka'ak (Turkish Cookies)

An easy homemade Turkish ka'ak recipe using common pantry ingredients. Try this tasty pastry from Turkey, famous for its breads and baked treats.

Ingredients

Start here, then move straight into the method.

  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 teaspoon mahleb
  • 1 teaspoon ka'ak spice blend (dqqa)
  • 1 teaspoon baking powder
  • a small pinch of bicarbonate of soda
  • 1/2 cup vegetable oil
  • 3 cups flour (or less, depending on the flour)
  • 1/2 cup sugar
  • 2 tablespoons date or carob molasses

Method

Follow the cooking sequence without leaving the page.

  1. Beat the eggs, then add the sugar and beat well.
  2. Add the lemon zest and vanilla, then gradually add the oil and the molasses while continuing to beat.
  3. Add the flour gradually, then add the mahleb and the ka'ak spice blend.
  4. Mix the ingredients well and knead until you get a smooth dough.
  5. Shape the dough into rounds, rings, or any desired shape, then dip the cookies in sesame seeds.
  6. Place the ka'ak rounds on a baking tray lined with parchment paper.
  7. Bake in a preheated oven at 180°C (350°F) for about 15 minutes, or according to your oven.
    Timers: 15 min
  8. Remove the ka'ak when they begin to turn light in color — do not leave them in too long, or they will become hard.
