Homemade croissants that are tastier and easier than you might think. Do you think making croissants is difficult? Absolutely not with this recipe, especially since the dough is prepared in stages.

Ingredients

  • First stage:
  • 6 cups flour
  • 1 tablespoon yeast
  • 5 tablespoons sugar
  • A pinch of salt
  • 1/2 tablespoon baking powder
  • 2 cups warm liquid milk (or as needed for the flour), or 4 tablespoons powdered milk with 2 cups warm water
  • 2 tablespoons soft butter
  • Second stage:
  • 1 block butter, 250 g, cold from the refrigerator
  • 2 tablespoons cornstarch
  • Filling: Cheese, za'atar, or chocolate
  • For brushing the tops: 1 egg + 1 tablespoon vinegar + a pinch of vanilla

Method

  1. Place all the dry ingredients together. You can also set the yeast aside in a cup with a little warm water and 1 tablespoon of sugar to proof it and let it activate before adding it to the flour.
  2. Add the liquids, bring the dough together, and knead until you get a soft dough that does not stick to the hands.
  3. Finally, add the butter and knead well.
  4. Cover the dough and let it rise for 1 hour...

  5. After the time has passed, divide the dough into 2 portions and roll each portion into a large loaf shape. Then dust the butter block with cornstarch so it can be grated. Grate half the butter block to cover the entire surface of the loaf.
  6. Fold the loaf over in layers and seal the edge well.
  7. Roll the dough out slightly, fold it 5 or 6 times, then roll it out again and fold it twice. Wrap it in plastic and place it in the refrigerator for 2 hours...

  8. Do the same with the second portion of dough.
  9. After 2 hours, take one portion of the dough and roll it into a rectangle or a round loaf, thinning it out as desired.

  10. Cut the rectangle or loaf, fill it as desired, and shape the pieces in the usual croissant form.
  11. Place the croissants on a baking tray and let them rest for another 2 hours.
    Timers: 120 min
  12. After the time has passed, brush the tops with the egg, vanilla, and vinegar mixture.
  13. Place the trays in a preheated oven at 180°C and set them on the middle rack.
  14. Bake the croissants on the top and bottom heat for about 7 minutes, watching them closely until they are cooked through and golden on both sides.
