Ingredients
- 5 cloves garlic
- 2 onions
- 1 cup chopped tomatoes
- 1 cup coconut cream
- 1 tablespoon curry powder
- 1 teaspoon sweet paprika powder
- 1 teaspoon turmeric
- 1 tablespoon hot chili powder, or to taste
- 1 teaspoon ginger
- 1 teaspoon dried coriander
- 1 teaspoon black pepper
- Shrimp, peeled, cleaned and drained
- Sesame oil + 2 tablespoons coconut oil
- or
- Olive oil
- 1/2 cup fresh cilantro, chopped

Method
- Sauté or fry the finely chopped onion in the oil until soft.
- Add the crushed garlic and stir, then add the spices and stir.
- Add the chopped tomatoes and cook until softened, then add the coconut cream and let the mixture simmer over medium heat for 15 minutes until the sauce thickens.Timers: 15 min
- Quickly fry the shrimp until it only changes color in a little sesame oil, then set aside.
- Place the shrimp on the sauce for just 6 minutes so the shrimp does not dry out or become rubbery.Timers: 6 min
- Sprinkle the chopped cilantro over the shrimp curry when serving.
- Serve the shrimp curry with white rice.
