How to make meshaltet feteer, one of the most famous Egyptian pastries. This recipe is for plain feteer meshaltet without a filling, so you can add your preferred filling later...

Ingredients

Start here, then move straight into the method.

  • 600 g flour, which is about 4 cups
  • 1 teaspoon yeast
  • 1 teaspoon vinegar
  • 1 teaspoon sugar
  • Salt
  • 2 1/2 cups water for kneading, or as needed
  • Rolling out the dough
  • Vegetable oil
  • 100 g melted butter

Method

Follow the cooking sequence without leaving the page.

  1. Combine all the dry ingredients, then add the vinegar.
  2. Mix well, then begin adding the water gradually while kneading continuously.
  3. Dust the work surface with flour and start stretching the dough until it becomes soft and non-sticky.
  4. Brush the dough with a little oil and cover it with plastic wrap for 15 minutes to rest.
    Timers: 15 min
  5. Divide the dough into 8 pieces, shape them into balls or rounds, cover them, and let them rest again for 15 minutes.
  6. Roll one piece of dough into a rectangle, using vegetable oil as needed, until it becomes very thin.
  7. Brush it with melted butter and fold it into a square, brushing butter on each fold.
  8. Set it aside, then roll out a second piece the same way. Before folding it, place the first square in the center, closed side down, and fold the dough over it, brushing butter on each fold.
  9. Set the shaped dough aside to rest, and roll out the remaining pieces the same way.
  10. In this way, we end up with 4 squares, each made from 2 pieces of dough together.
  11. Line a baking tray with parchment paper and flatten each square to the size you want. Place them on the tray and brush the tops with egg mixed with vinegar or milk, or any other wash to help the tops brown.
  12. Place the tray in a preheated oven at 200 degrees until the bottom is golden, then turn on the top heat and brown the top of the feteer meshaltet.
