Oven-grilled fish... a dish suitable for lunch and dinner, and also perfect for special occasions

Ingredients

  • 1 large fish
  • For the marinade:
  • A pinch of garlic powder
  • A pinch of ground ginger
  • Chopped fresh coriander
  • Ground cumin
  • Lemon juice
  • Olive oil
  • To add during grilling:
  • Onion
  • Potato
  • Tomato
  • Colored sweet pepper
  • 1 tablespoon salt
  • 1/2 cup vegetable oil
  • 3 tablespoons ground cumin
  • 1 tablespoon fresh or ground ginger
  • 1 teaspoon black pepper
  • 1/2 cup chopped fresh coriander
  • 8 garlic cloves
  • Hot pepper
  • Water

Method

  1. Wash the fish well and leave it to drain.
  2. Season the fish and set it aside for a while.
  3. Cut the onion, potato, tomato, and colored sweet pepper into round slices and place them in the bottom of an oven tray.
  4. Add the oil, salt, cumin, ginger, pepper, chopped coriander, minced garlic, hot pepper, and lemon juice, and mix all the ingredients together.
  5. Place the seasoned fish in the tray and mix it with the ingredients in the tray.
  6. Add 1 cup of water to the tray, then cover it with aluminum foil or leave it uncovered.
  7. Place the tray on the middle rack of the oven over high heat.
  8. When the fish is cooked, turn on the top heat and brown it.
