How to make Itch, also called Itj, a well-known Armenian dish known for its delicious recipes... Here is Itch, or Armenian tabbouleh, prepared in a special and very, very tasty way!
Ingredients
- 1 cup coarse bulgur
- Parsley
- Mint
- 4 tomatoes
- Green onion
- Dry onion
- 2 tablespoons tomato paste or concentrated tomato sauce
- 1 tablespoon pepper paste
- Olive oil
- 1 teaspoon ground cumin
- 1 tablespoon pomegranate molasses or lemon juice to taste
- Meanwhile, finely chop the parsley, mint, and green onion

Method
- First, wash the bulgur well with hot water.
- Finely chop the onion, then sauté it in olive oil or ghee.
- When the onion wilts, add the bulgur and stir with the onion, then add 1 tablespoon tomato paste and the pepper paste and mix well.
- Add 1 cup of water... when the mixture comes to a boil, reduce the heat and let it simmer until the bulgur is cooked.
- Once the ingredients are cooked, add the salt and cumin, then remove from the heat and set aside until the Itch cools.
- Meanwhile, finely chop the parsley, mint, and green onions.
- When the bulgur mixture has cooled, add the chopped herbs on top and mix well.
- Finally, add the olive oil and pomegranate molasses, or substitute lemon juice if desired.
