  • 2 cups peeled fava beans
  • 2 cups chickpeas
  • 1 tablespoon falafel spice
  • 1 teaspoon dried coriander
  • 1 tablespoon baking soda
  • Salt
  • 1 teaspoon baking powder
  • 1 medium dried onion
  • 5 cloves garlic
  • A small amount of green marjoram
  • A small amount of fresh coriander
  • How to fry the falafel
  • The frying pot should have plenty of oil so that the falafel ball sinks slightly and then rises to the surface.

  1. Place the fava beans and chickpeas in a deep bowl of water and leave them to soak overnight.
  2. Peel the chickpeas; this is one of the secrets to making delicious falafel.
  3. Grind the fava beans and chickpeas until smooth.
  4. Grind the onion with the garlic, fresh coriander, and marjoram, with a pinch of salt.
  5. Mix all the ingredients together, without adding the baking soda and baking powder until it is time to fry, about 15 minutes beforehand.

  6. When the falafel disk is browned, place it in a wire rack container to drain off the oil.
  7. Serve the falafel with tahini sauce, fresh vegetables, and pickles.
  8. Note : The fava beans and chickpeas must be soaked overnight, but without baking soda.
