How to Can Fresh Corn
Fresh corn is used in many recipes, but it isn't always available fresh year-round. Learn how to can fresh corn instead of buying it pre-canned.
Ingredients
Start here, then move straight into the method.
- Corn cobs
- 1 teaspoon white vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- Water
Method
Follow the cooking sequence without leaving the page.
- Cut the corn kernels off the cobs with a knife, wash them and drain them... repeat the washing 3 times...
- Put the corn kernels into airtight glass jars, leaving each jar slightly less than full to leave room to add water later... put 1 teaspoon each of sugar, salt, and vinegar into each jar and cover the corn with water, then seal the jar tightly...
- Prepare a pot... place a cloth or towel in its bottom and put the glass jars on it... then pour water up to about halfway up the jars, cover the pot and put it on the heat... when the water boils, reduce the heat and leave the pot on medium heat for about 30 to 40 minutes depending on the hardness of the corn kernels....Timers: 40 min
- After the time, remove the jars from the pot and let them cool and store them for when needed..
- Note: if the corn is fresh and tender, do not leave it on the heat for more than half an hour.
