Green Bean Stew
A favorite winter dish — a flavorful, healthy green bean stew. Serve with radishes and green onions for stronger, balanced flavors.
Green beans are very nutritious and especially comforting in cold weather!
Ingredients
Start here, then move straight into the method.
- Half a kilo fresh green beans (in pods)
- 1 large cup ground beef or beef pieces, according to preference and availability
- 1 dry onion
- 2 tomatoes
- 5 cloves garlic, crushed
- 1 cup fresh cilantro, chopped
- 1 tbsp dried coriander
- A pinch of salt
- 1 tsp black pepper
- 2 tbsp tomato paste
- 1 tbsp red pepper molasses (dibs) — optional, to taste
- Water
Method
Follow the cooking sequence without leaving the page.
- Wash the green beans and boil them for about 30 minutes or until nearly tender with a stick of cinnamon.Timers: 30 min
- Remove the beans from the heat, place them in a colander to drain the cooking water, and set aside...
- Start by frying the dried onion a little until it browns slightly, then add the garlic and chopped fresh coriander.
- Add the meat and sauté it well with the onions, garlic, and coriander.
- Add the tomatoes after peeling and chopping them.
- Add salt, black pepper, dried coriander, and any other spices you like...
- At this stage, add about 3 cups of water with two tablespoons of tomato paste or tomato purée and pepper molasses, and let the mixture simmer on low heat until the stew sauce thickens.
- Add the boiled beans to the stew mixture...
- Leave the mixture on low heat for about 15 additional minutes or until the beans are properly cooked...
- Serve the green bean stew alongside Egyptian rice cooked with vermicelli
