Ingredients

  • 1 1/2 cups kataifi shreds or fine semolina, or any chicken flour
  • 1/2 cup ghee or butter
  • 1 tablespoon orange blossom water
  • 1 tablespoon rose water
  • 1 cup sugar
  • 1 1/2 cups hot water

Method

  1. Put 1 cup of sugar in a non-stick pan on the stove until it caramelizes.
  2. Add hot water over the caramelized sugar, stir and set the mixture aside.
  3. In another non-stick pan, brown the shredded kunafa or farikha flour, and when browned add the ghee or butter and stir.
  4. Add the caramel mixture (sugar and hot water) you prepared in the first step and stir to obtain a sticky dough.
  5. Add orange blossom and rose water, stir and then remove the mafroukeh dough from the heat immediately.
  6. Spread the mafroukeh in the serving dish after brushing it with oil; after it cools well distribute the fresh cold ashta on top.
  7. Garnish the ashta with nuts and serve.
