Semolina Maamoul with Cream Filling
Maamoul Mad with cream filling is a beloved Arabic sweet with wide popularity. You can make Maamoul Mad with cream filling or with dates, depending on preference and the ingredients you have.
Ingredients

- 250 g fine semolina
- 250 g all-purpose flour
- 100 g butter
- 100 g ghee
- 1/2 cup sugar
- 1 tablespoon yeast
- pinch of baking soda
- pinch of ground mahlab

Method
Follow the cooking sequence without leaving the page.
- It is best to rub the fine semolina and farikha flour with butter and ghee the night before to prepare Maamoul Mad so the mixture absorbs the fats well.
- Knead the ingredients with orange blossom water and rose water well until you get a homogeneous dough.
- Let the dough rest for two hours, then spread a layer of dough in an oven tray, place the ashta (clotted cream) on top, then a second layer of dough.
- Bake the Maamoul Mad in the oven at 180°C for about 20 minutes or until the maamoul is cooked, depending on your oven.Timers: 20 min
