How to Make Fresh Fig Jam

- 1 kg candied green figs
- 1/4 teaspoon mastic
- 1/4 teaspoon lemon juice
- 500 g sugar
- 2 cups water or more to taste
- 1 tablespoon anise seeds
- Sesame
- Nuts to taste — optional
- Note:
- Water amount should be generous because the aim is to reach a syrup-like consistency. This is the secret to this type of jam served with figs.
Method
- Dissolve the sugar in the water.
- Put the figs into the sugar water and boil. Leave them over medium heat and stir from time to time gently to preserve the shape of the figs.
- When the figs are half cooked, add sesame, anise, mastic, lemon juice, and nuts as desired, such as walnuts and almonds.
- When the figs are cooked, remove the jam from the heat.
- Let the fresh fig jam cool well and pour it into airtight glass jars.

- There should be plenty of water because the goal is for the mixture to turn into a syrup-like consistency... this is the secret to the success of this type of jam, where we serve the syrup as an essential part of the dish with the figs.
