1 kg candied green figs

1/4 teaspoon mastic

1/4 teaspoon lemon juice

500 g sugar

2 cups water or more to taste

1 tablespoon anise seeds

Sesame

Nuts to taste — optional

Method:

Dissolve the sugar in water

Add the figs to the sugar-water and boil. Maintain medium heat and stir occasionally to preserve the fig shape.

When the figs are halfway cooked, add sesame, anise, mastic, lemon juice, and nuts if desired (walnuts, almonds, etc.).

When the figs are cooked, remove from heat.

Let the fresh fig jam cool completely and transfer to airtight glass jars

Note:

Water amount should be generous because the aim is to reach a syrup-like consistency. This is the secret to this type of jam served with figs.
