Homemade Sausage

Sausage is a delicious appetizer. This home-made sausage recipe walks you through every step. Enjoy the sausage fried on its own, or as a topping for pizzas or with eggs.

Spice mix:

1 tablespoon ground coriander

1 tablespoon black pepper \r\n1 teaspoon ground cloves\r\n1/2 teaspoon ground nutmeg\r\n1/2 teaspoon ground cinnamon\r\n1 tablespoon ground cardamom\r\n1 tablespoon hot red pepper powder\r\n1 tablespoon garlic powder

Mix well and store the blend in a glass jar

To make the sausage:

1 kg finely minced meat with a little fat

Add 1 tablespoon of the spice blend you prepared

Also add half a hot pepper and 3 crushed garlic cloves, and you may add 2 tablespoons of pepper molasses if desired

Mix the meat well with the spices and wrap in a thin cloth so the fat can render

Typically the meat mixture is stuffed into well-cleaned casings. As shown in the photos, you can also wrap it in plastic kitchen wrap and roll tight to resemble a tube.

Store in the fridge and use when needed

Fry the sausage and use for sandwiches or pizzas, or fry with eggs if you prefer

Ingredients

  • 1 tablespoon ground coriander

  3. Mix the meat well with the spice blend and place it in a thin special cloth so the fat can drain out.
  4. Typically the meat mixture is stuffed into well-washed, clean casings. As shown in the accompanying photos, you can also put it in kitchen plastic and twist and tie both ends tightly until it becomes tube-shaped.
  5. Store in the refrigerator and use as needed.
  6. Fry the sausage and use it for sandwiches or on pizza, or fry it with eggs as desired.
  7. Mix them all well and store the spice blend in a glass jar.
