  • 1 kilo potatoes
  • 1 large onion
  • Sumac
  • 1 cup fine bulgur
  • Pine nuts or walnuts to taste
  • Salt
  • Black pepper
  • Basil or marjoram
  • Filling:
  • 3 onions
  • 2 tablespoons sumac
  • 2 tablespoons pine nuts or walnuts, as desired
  • How to prepare the filling:

Method

  1. Boil the potatoes and mash them well until smooth. Set aside.
  2. Prepare the onion in the meantime. Heat a little oil and fry the finely chopped onion until golden.
  3. Mix the washed fine bulgur with salt, spices, and marjoram or basil, kneading well and adding a little water until the bulgur swells... then add the fried onion to the kibbeh mixture and knead well
  4. Filling:
  5. 3 onions
  6. 2 tablespoons sumac
  7. 2 tablespoons pine nuts or walnuts, as desired
  8. How to prepare the filling:
  9. Cut the onions into wedges and fry them in oil until golden, then add pine nuts or walnuts as desired. Add the sumac and mix well
  10. Prepare an oven tray and grease it with oil. Take a portion of the kibbeh and spread it across the bottom of the tray, then add the filling and another layer of kibbeh, score it and put it in a preheated oven until it browns well and cooks through...
  11. Serve the potato kibbeh baked in a pan with a green salad
