Chicken Fajitas with Guacamole

Fajita ingredients:
1/2 kg boneless chicken
1 small cup olive oil
1 tablespoon soy sauce
1 teaspoon black pepper
1 teaspoon lemon zest
1 teaspoon grated ginger
2 tablespoons vinegar
1 tablespoon red pepper paste
1 teaspoon chicken seasoning
1 teaspoon dried coriander
1 teaspoon cumin
2 tablespoons yogurt
1 teaspoon mustard
Salt
4 cloves garlic, mashed
Chicken fajita:
Slice the chicken after washing into shawarma-like strips and marinate in all the above ingredients for an hour, then brown in a skillet over low heat…
Separately sauté two onions, chopped, in a little oil; then add 3 colorful peppers cut into strips and sauté them with a cup of fresh sliced mushrooms (or canned mushrooms as available)…
Add a teaspoon of garlic powder with a pinch of black pepper, a teaspoon of paprika, and a pinch of tomato and corn.
After the vegetables are sautéed and wilted, add the fried chicken and stir well; simmer for another 5 minutes on the heat, then spoon the chicken and vegetables onto a serving dish... You can sprinkle mozzarella cheese over the chicken and vegetables and pop it in the oven for a few minutes until the cheese melts.
Guacamole ingredients:
2 avocados
1 onion
1 tomato
1 teaspoon ground cumin
Salt 2 cloves garlic, minced
1 tablespoon lemon juice
2 tablespoons green onions
How to make Guacamole:
Mash the avocados until creamy; add the chopped onion and tomato finely, then the cumin, coriander, salt, and lemon juice, followed by the garlic and green onion.
Mix well and serve the guacamole as a dip alongside the fajitas
