Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon lemon juice
  • 1 1/2 cups flour
  • 2 tablespoons ghee
  • Return to the sugar dough on the surface... Shape it into a large, hollow ring like a donut.
  • This ring is turned into a loop... Dip the loop in the flour-and-ghee mixture and dust it with flour on all sides. Place your hands in the center of the loop and pull from both sides to enlarge it. Twist it together like a hair tie to form two rings interlocked; redip them in the flour mixture and repeat... pull the rings to elongate, then twist into a ring within a ring and dip again in flour, and repeat dozens of times until you obtain thin rings resembling hair strands

Method

  1. Place the sugar and water over heat and stir well, then add lemon juice.
  2. When the syrup mixture begins to boil, leave it over medium heat without stirring.
  3. When the edges of the mixture start to darken, stir it and pour it onto a slab or marble surface greased with oil.
  4. We will have a small dough mass; leave it and prepare the mixture needed to dip the dough into to turn it into threads for cotton candy.
  5. Separately, prepare on the stove a mixture of:
  6. 1 1/2 cups flour
  7. 2 tablespoons ghee (clarified butter)
  8. First toast the flour over low heat for about 3 minutes, then add the ghee, stir well for 2 minutes, and remove from the heat.
    Timers: 3 min, 2 min
  9. Return to the sugar dough placed on the slab... shape it like a donut into a large circle with a hole in the middle.
  10. Turn this circle into a ring... dip the ring into the flour-and-ghee mixture and coat it with flour from all sides. Put your hands in the middle of the ring and pull it from both sides until it stretches. Fold it over like a hair tie so you have two rings nested together, dip them again in the flour mixture and repeat the process... pull the rings to lengthen them, then twist them to make a ring within a ring and dip in flour, and repeat dozens of times until you have rings as thin as hair.
  11. Place the cotton candy on a serving plate and garnish as desired with ground pistachios or walnuts.
