How to Prepare Qatayef Batter (Dough)

Ingredients

Start here, then move straight into the method.

  • 3 cups sifted flour
  • 3 cups water at room temperature
  • 3 tablespoons sugar
  • 1/2 tablespoon baking powder
  • 1 teaspoon yeast
  • A pinch of salt
  • Note
  • You can replace two tablespoons of flour with 2 tablespoons fine semolina, 1 tablespoon cornstarch, and a pinch of baking soda. This way you get crisp qatayef.
  • The tablespoon of cornstarch and the pinch of baking soda are essential, especially if we plan to fry the qatayef after filling them... to achieve the desired crispness.

Method

Follow the cooking sequence without leaving the page.

  1. Blend the ingredients in a blender until you get a batter similar to crepe batter. It should not be too thick or too thin. Let it rest for about half an hour or a bit longer.
  2. Use a hot pan and pour a little batter to form a circle. When bubbles appear and the bottom browns slightly, lift it from the pan immediately.
  3. Place the Qatayef on parchment paper in a plate and cover to keep them soft.
