  • Half a can of sweetened condensed milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon coconut extract
  • One egg white
  • 1.5 cups shredded coconut
  • Hazelnuts for filling

Method

  1. Melt the white chocolate with only a quarter of the condensed milk can, the vegetable oil, and the coconut extract in a double boiler. (A double boiler is a pot placed over simmering water with a smaller pot on top containing the ingredients to melt them via steam.)
  2. When the chocolate melts and the ingredients come together, add the egg white and only one cup of shredded coconut...
  3. Stir again until well combined. Then refrigerate the mixture for about two hours until it cools and firms up into a dough-like texture.
  4. After the time, take a hazelnut and wrap it with a ball of the white mixture, continuing until all the quantity is used.
  5. After finishing, dip the Rafaello bites in the remaining condensed milk (¼ cup), then roll in coconut to coat completely. Refrigerate to chill.
