Freekeh Soup

Freekeh soup, a nourishing and very tasty option. Serve freekeh alongside main dishes or as a light dinner.

Ingredients

Start here, then move straight into the method.

  • 2 cups freekeh, washed and soaked in water
  • 1 kilogram chicken
  • 2 onions
  • a pinch of black pepper

Method

Follow the cooking sequence without leaving the page.

  1. Wash the chicken well with salt and tahini and place it in a deep pot, cover with water, and boil it. When the white foam appears, discard the water and add fresh clean water, then add all the chicken boiling spices: nutmeg, cinnamon, cardamom pods, and onion.
  2. Wash the freekeh grains well and leave them soaking in water for one hour.
  3. Chop the onion and fry it well until it softens. Add the freekeh over the fried onion with a pinch of salt.
  4. Pour the chicken cooking liquid over the onion and freekeh and bring the mixture to a good boil. Add the boneless pieces of chicken and reduce the heat until all the ingredients are cooked.
