Ingredients

  • 2 packs Lotus biscuits
  • 100 g butter
  • 2 tablespoons Lotus butter
  • 2 sachets ready-made cream powder
  • 1 cup liquid milk
  • 1 can ready-made cream cheese
  • 1 cup or 10 squares cream cheese
  • 1 sachet lemon-flavored gelatin
  • 1/4 cup water

Method

  1. Line the base of the pan with whole Lotus biscuits or Digestive biscuits or any plain biscuits that work. The biscuits must be crushed and mixed with melted butter.
  2. Place the biscuit base in the fridge while you prepare the cream.
  3. Whip the instant powdered cream with 1 cup liquid milk for 5 minutes, and when it becomes frothy add a can of plain clotted cream (qashta)....
    Timers: 5 min
  4. Also add cream cheese of any type available.... Dissolve a packet of gelatin (jello) in lukewarm water and when it cools add it to the cream mixture.
  5. Mix the cream with a wooden spoon, not in an electric mixer.
  6. Spread the cream over the biscuit base in the pan and return the pan to the fridge for at least 4 hours until it sets and firms up well...
    Timers: 240 min
  7. When serving, melt Lotus spread (quantity to taste) over low heat or in the microwave and pour it over the cheesecake and decorate as desired...
  8. Note: if you want a sweeter taste, you can add a little powdered sugar (not granulated sugar) to the cream mixture..
