Ingredients

  • 1 kilogram flour
  • 2 tablespoons sugar
  • 2 tablespoons yeast
  • 2 tablespoons vinegar
  • A pinch of salt
  • 1/2 cup oil
  • 3 tablespoons powdered milk
  • 2 tablespoons yogurt
  • 2 cups water, or as needed

  • Vegetable slices such as onion, sweet pepper, and tomato
  • Corn
  • Mushrooms
  • Pitted olives
  • Cheese

Method

  1. Mix all the dry ingredients in a bowl, then add the vinegar and oil and rub together by hand.
  2. Add the water gradually and knead until you get a smooth, soft dough.
  3. Cover it with plastic wrap, then a cloth, and let it rise for at least an hour, or depending on the temperature.
  4. When it has puffed up and is ready, shape it into balls of the desired size.
  5. Let the dough balls rest again for 15 minutes.

  6. After the time has passed, roll them out to the desired thickness and let them rest for 5 minutes before adding the topping.

  7. Spread the pizza sauce over the dough rounds, then top with the vegetables and olives, and finish with cheese on top.
  8. Place the pizza in a hot oven at about 200°C until it browns and cooks through on the bottom, then brown the top.
  9. Note: This dough is suitable for all kinds of baked pastries such as manakish.
