How to Make White Nougat
A wonderful, easy and delicious recipe! One note about white nougat is that it requires some constant stirring, but apart from that everything is easy and readily available in every kitchen.

- 400 g honey
- 260 g sugar
- two egg whites
- pinch of salt
- one teaspoon vanilla
- mixed nuts: pistachios, almonds and hazelnuts
Method
- Put the honey in a pot over a very, very gentle low heat and add the sugar... You can reduce the sugar amount to taste. The sugar quantity can range between 220 and 260 grams.
- Continue stirring the honey and sugar over very low heat for about half an hour...
- Meanwhile, whisk the two egg whites (only the whites) in an electric mixer with a pinch of salt and continue beating until they thicken and set. The whites will become a mixture called meringue.
- Return to the pot with the sugar and honey, raise the heat slightly and begin adding the whipped egg white mixture very slowly over the honey and sugar...
- Continue beating and as the mixture incorporates, add more meringue or egg white mixture. Add the vanilla at this stage and continue beating until all the egg whites are used. Leave the mixture on low heat for about half an hour, stirring continuously.
- The mixture must thicken well before adding assorted nuts as desired. You can add pistachios, almonds, and hazelnuts.
- Spread the mixture on a surface or pan dusted with cornstarch and cut it when it has cooled...
