- Dried molokhia
- Chicken breasts or a whole chicken, as desired
- Vegetable oil
- Bunch of fresh coriander (cilantro)
- 1 tablespoon dried coriander
- 7 cloves garlic or more, to taste
- Dried onion
- 5 whole cloves of garlic, uncrushed
- Juice of 4 lemons
- Hot pepper or chili, to taste
- Salt
- 1 tablespoon butter, optional
Method
- First, clean the dried molokhia leaves and remove any impurities. Pour boiling water over them and leave them soaked for about an hour.
- After that, squeeze the molokhia leaves well by hand, then pour boiling water over them again; repeat this process several times until the washing water runs clear.
- Squeeze the molokhia leaves well and fry them in vegetable oil for a few minutes, then set aside.
- Wash the chicken well, rub it with salt and vinegar, and boil it until cooked...
- Pour the chicken cooking liquid over the fried molokhia leaves and let the mixture boil over medium heat.
