Majadra Hamra — an easy, quick vegetarian recipe originating from southern Lebanon.
Ingredients
- 4 cups small red lentils
- 3 cups coarse bulgur
- 3 onions
- vegetable oil + olive oil
- salt
- 4 cups water

Method
- Finely chop the onions and fry them in the pot until very dark golden without burning.
- Drain them from the oil and set the oil aside.
- Add water over the onions and lentils and bring the water to a boil.
- After a short while, when the lentils begin to soften, add the bulgur and salt and stir, then reduce the heat and cover the pot until the Majadra Hamra is cooked.
- When the Majadra is cooked, pour the reserved oil over the top and stir a little, then serve the Majadra immediately.
