Majadra Hamra — an easy, quick vegetarian recipe originating from southern Lebanon.

Ingredients

  • 4 cups small red lentils
  • 3 cups coarse bulgur
  • 3 onions
  • vegetable oil + olive oil
  • salt
  • 4 cups water

Method

  1. Finely chop the onions and fry them in the pot until very dark golden without burning.
  2. Drain them from the oil and set the oil aside.
  3. Add water over the onions and lentils and bring the water to a boil.
  4. After a short while, when the lentils begin to soften, add the bulgur and salt and stir, then reduce the heat and cover the pot until the Majadra Hamra is cooked.
  5. When the Majadra is cooked, pour the reserved oil over the top and stir a little, then serve the Majadra immediately.
